Healthy Vegan Matcha Lime Chia Pudding Recipe

This is a decadent and rich dessert, and is super healthy at the same time! It’s a refreshing and beautiful way to finish off a summer meal.

Ingredients:
– 1/2 to 1 lime, zest and juice
– 2 tsp matcha green tea powder
– 14 oz can coconut milk
– 1-2 dates, or 1 Tbsp coconut/unrefined sugar, 1 Tbsp maple syrup, 10-15 drops liquid stevia
– 2 Tbsp chia seeds (whole or ground)

Toppings:
– Blueberries, blackberries, sliced strawberries
– Coconut whipped cream
– Toasted unsweetened coconut
